Mead is one of the first fermented beverages throughout history. It’s an ancient drink made of honey, water, and yeast. Since it’s conception, mead has evolved into many different forms. Some meads contain herbs, spices, fruit, or hops. Since this is my first attempt at making mead I decided to stick with a very basic recipe. No adjuncts were added to this honey wine and if you know my brewing style, you know that was a very difficult thing to do. I used 15 pounds of raw colorado honey, filtered water, and sweet mead yeast.

Coming in at just over 12% this is quite a strong drink. it has been aging for 3 months to try and get rid of some of that alcohol heat and balance the flavors. It’s definitely on the sweeter side but not overbearing. If this is your first experience with mead I hope you enjoy it, and if you’re a daily mead drinker I hope I have done the style justice.
